- Step 1: In a bowl, combine chia seeds, ground flaxseed, salt, and water. Stir well until fully mixed.
- Step 2: Cover and let the mixture sit for 20–30 minutes, allowing it to thicken and form a gel. Toward the end of this time, preheat the oven to 300°F (150°C)
- Step 3: Add the mixed seeds (sesame, sunflower, and pumpkin) and stir until evenly combined.
- Step 4: Line a baking sheet with parchment paper and lightly brush with avocado oil.
- Step 5: Spread the mixture evenly onto the baking sheet using a spatula, forming a thin, even layer (about 2–3 mm thick).
- Step 6: Bake for 1 hour. Remove from the oven and cut into about 1-inch squares using a pizza cutter. This may yield up to about 70 crackers.
- Step 7: Return to the oven and bake for another 30 minutes, or until golden and crisp.
- Step 8: Remove from the oven and let cool completely. The crackers will firm up as they cool.
- Step 9: Store in an airtight container at room temperature for 1 weeks, or refrigerate for longer freshnes
